Arizona Sunshine Lemon Pie

+For pie:

°1 large lemon

°4 large eggs

°1⁄2 Melted Butter Cup

°1 teaspoon vanilla

°1 cup 1⁄2 sugar

°1 (9 inches) piece, unbaked (used deep frozen dish)

°1 cup cream whisk

°2 tbsp sugar

*Methods :

Remove the crust of the pie from the freezer or make it yourself. I used a deep frozen pie crust and it worked perfectly. I put it on the cookie sheet because the metal pan wasn’t that strong but if you use a glass pie dish you don’t need to do it.

Preheat oven 350 degrees.

Wash the lemon then cut and remove all the seeds. (Don’t peel it, you’ll mix the whole lemon!) Put it in a high powder blender (such as Vitamix).

Add eggs, butter, vanilla and sugar. Mix until smooth. I started at 5 power and then moved to 10.

Pour the mixture into your herd. Bake for 40 minutes or until set.

Let it cool and then cool in the fridge.:

Place the mixing bowl and rackets in the freezer for about 20 minutes. Add whisking cream and sugar. Whip until the peaks are formed.

Slice the pie and serve chilled with a little whip cream on top. This can be enjoyed warm (it won’t be constant) or room temperature but we preferred it to cool down
